I think I posted this before, but it's not in my memories, so I'm reposting.
Vegetarian Spinach Quiche
2 pinches salt
1 cup heavy cream or half-and-half
grated nutmeg
2 eggs
4 oz crumbled feta cheese
¼ cup shredded gruyere cheese
½ bunch scallions, sauteed
10 oz frozen chopped spinach, thawed and drained well
1 frozen 9” pie crust
Heat oven to 350 degrees.
Whisk cream or half-and-half together with eggs until thoroughly combined. Add salt and nutmeg, and whisk to combine.
Evenly distribute fillings in the pie crust, being careful not to over-fill. Pour egg mixture over the fillings, leaving room for expansion. Bake until firm to the touch, like set Jell-O, 45-60 minutes. Cool at least 15 minutes before slicing.
