for my own reference later, or whoever wants it

I used the following as a base for my sweet potato yumminess.

* 5 large cooked and mashed sweet potatoes
* 1 cup white sugar
* 1/2 cup butter
* 1/3 cup evaporated milk
* 2 eggs, beaten
* 1 teaspoon vanilla extract

Streusel topping:

* 1/3 cup butter, melted
* 1 cup chopped pecans
* 1 cup packed light brown sugar
* 1/2 cup all-purpose flour

1. Mix together sweet potatoes, white sugar, 1/2 cup butter or margarine, milk, eggs, and vanilla. Spread into a 9 x 13 inch baking dish.
2. Mix together 1/3 cup melted butter or margarine, pecans, brown sugar, and flour. Spoon on top of sweet potato mixture.
3. Bake at 350 degrees F (175 degrees C) for 25 to 30 minutes.

I discovered fairly quickly that it's a pita to chop uncooked sweet potatoes, so after I skinned them, I nuked each one for 5 minutes then cut them for the boiling pot. I also covered the streusel topping with a layer of mini marshmallows before baking for extra numminess.
