Radish, Apple, and Mango Salad

Jan 30, 2006 23:58

So, I made this dish about a month and a half ago for work. It came out absolutely delicious, but I lost the recipe for a time and couldn't post it. Well, I found it...so here it is:

Ingredients:
10-15 radishes
1 apple (peeled, cored, and thinly sliced)
2 celery sticks (thinly sliced)
1 small ripe mango
fresh dill sprigs, to garnish

Dressing:
120ml/4fl oz/1/2 cup sour cream
10ml/2 tsp creamed horseradish
15ml/1 tbsp chopped fresh dill
salt and freshly ground black pepper

Serves 4

  1. To prepare the dressing, blend together the sour cream, creamed horseradish, and dill in a small bowl and season to taste with a little salt and pepper.
  2. Trim the radishes and slice them thinly. Put in a medium serving bowl together with the apple and celery slices.
  3. Halve the mango lengthwise, cutting either side of the stone (pit). Make even, criss-cross cuts through the flesh of each side section, without cutting the skin, and bend it back to separate the cubes. Remove the cubes with a small knife and add to the bowl.
  4. Pour the dressing over the vegetables and fruit and stir gently so that all ingredients are well coated. garnish with dill sprigs and sever immediately.

Enjoy!
