So, I made this dish about a month and a half ago for work. It came out absolutely delicious, but I lost the recipe for a time and couldn't post it. Well, I found it...so here it is:
Ingredients:
10-15 radishes
1 apple (peeled, cored, and thinly sliced)
2 celery sticks (thinly sliced)
1 small ripe mango
fresh dill sprigs, to garnish
Dressing:
120ml/4fl oz/1/2 cup sour cream
10ml/2 tsp creamed horseradish
15ml/1 tbsp chopped fresh dill
salt and freshly ground black pepper
Serves 4
- To prepare the dressing, blend together the sour cream, creamed horseradish, and dill in a small bowl and season to taste with a little salt and pepper.
- Trim the radishes and slice them thinly. Put in a medium serving bowl together with the apple and celery slices.
- Halve the mango lengthwise, cutting either side of the stone (pit). Make even, criss-cross cuts through the flesh of each side section, without cutting the skin, and bend it back to separate the cubes. Remove the cubes with a small knife and add to the bowl.
- Pour the dressing over the vegetables and fruit and stir gently so that all ingredients are well coated. garnish with dill sprigs and sever immediately.
