Tonight I had the opprotunity to bake for tomorrow, a cranberry bread that I grew up with, always having it for breakfast on christmas morning, calling it "Grammy's Cranberry bread. Not until after she'd died, and I'd inheirited her cook books and recipe boxes did I learn the truth. Her cranberry bread secret recipe was actually published by Ocean Spray in teh '50s. So, to celebrate my Grammy, and wish you a Merry Merry seaason, I bring you "Grammy's Cranberry Bread"
Sift together:
2 cups Flour
1/2 tsp salt
1 1/2 tsp baking powder
1/2 tsp baking soda
1 cup sugar
Blend Together in a large measuring cup:
Juice and rind from one orange
2tbsp shortening (I use butter)
Add boiling water to make 3/4 cup
Add liquid to dry ingredients, then add 1 egg well beaten,
then 1 cup halved raw cranberrys
1/2 cup chopped and toasted walnuts
pour into greased and floured loaf pan, bake at 350' for 45 minutes or until a toothpick inserted comes out clean.
This is great toasted for breakfast on christmas morning! It's ok to double the rrecipe, but don't try to increase it past that, it just did not work.
And in the familial theme, I made my
GreatGreatGreatGreatGrandmotherGedney's Pumpkin Pie
Roast up pumpkin or other orange squash, mash up and use 1 cup for the recipe. ( I found out the rest freezes nicely until time for another pie!) Do Not try canned pumpkin! yeucky result.
So:
1 Cup cooked pumpkin or squash
3/4 cup sugar
3/4 cup milk
2 eggs, separated
2 TBSP melted butter
1 1/2 tsp cinnamon
1/2 tsp each: Ginger, Nutmeg, Allspice
Add egg yolks to sugar and blend
Add spices to melted butter and blend
Add both the above to the pumpkin
Beat egg whites stiff and add
(note, Mom didn't describe when to add the milk, but I've added it to the yolks and sugar mixture before blending in with the Pumpkin, let me know if you think it should go in somewhere else)
Pour into deep dish pie crust and bake at 425' for 15 minutes then turn the oven to 325' and continue for 35 minutes more. Pie is done when a knife inserted in middle comes out clean. Yuimmy with freshly whipped cream.
