Low key weekend so far. Yesterday, we did make it to the gym and the grocery store, but by the time we got home, it was a bit too late to embark on making something as elaborate as lettuce wraps, so we had rice and beans instead. They were yummy too.
Today we slept in, had brunch (turkey bacon, eggs, potatoes), and then headed over to Target so I could pick up a few things. The pair of workout pants I've had since high school finally gave up the ghost, and thankfully I noticed the many tiny tears on the inner thighs that could've easily and suddenly become huge embarrassing holes before we were at the gym on Friday. So I got a new pair of those, and a few other things.
We came home and I made the lettuce wraps. Oh my god, they were exactly as I had imagined and had been craving for days. I julienned plenty of raw veggies (carrots, cucumber, red pepper, and green onion); cut some chicken into strips and stir-fried it with fresh ginger, green onions, and sesame seeds; piled a plate high with leaves of fresh boston lettuce; and put out some additional accoutrement - peanuts, peanut dressing, and Thai sesame and lime dressing. We also had some coconut Thai rice on the side. Holy crap was that a delicious and filling meal. Definitely making it again.
After dinner, we went out again for a bit to wander around the mall and get some Coldstone ice cream. I did not find anything to buy, which is probably a good thing. Now we're home and I'm really sleepy. Maybe will go to bed early. Tomorrow my main goal is to go to the gym, and study for the macroeconomics test on Monday.
