Mmmm Gumbo!
So I made gumbo last night, first time ever making or eating it. The gumbo mix was a gift from Christmas time from Obie's mom. It was Gullah Gullah Gumbo, I made Aunt Maggie's Cornbread with it too. It didn't look like that much gumbo so I added a bit of frozen veggies: corn, peas, and greenbeans, with shrimp too, cause you can't have gumbo without shrimp.
All I have to say is OH wow. Even the local french/creole/cajin (LOVE you peter!) said it was damned close to perfect, but we couldn't place what it needed. That's ok, the whole house enjoyed it and there was enough for lunch today too! And the cornbread, OMG! It was fluffy and so soft and sweet... I've never had fluffy cornbread, it's always been very dense after baking but this stuff was wonderful! I will be buying more, lots more, oh yes...
Not much cleaning was done yesterday, I straightened the kitchen up and picked up some trash from the breezeway and living room. I think Peter did laundry last night while waiting on his check. All that's really left is one final sweep of the house to take care of clutter and trash and straighten things up, and to do the living room floors. I'm SO glad the cleaning is almost over! The parties can begin!
I'm not certain it could be any more dreary outside though... It's raining and thundering and lightening! The thunderclap from a few minutes ago was so close it shook the whole building like an earthquake! My officemates cheered! :D I just wanted to lay in bed under my mountain of covers and sleep the day away, what with the rain beating on the windows... I think that would be heaven right now.
