So, I have a $1600-something credit with United, for which I cannot change the passenger name and which can only be rebooked as a single itinerary (i.e. I cannot use it for several separate vacations). In other words, I'm going somewhere international, which is fine with me.
I've looked at several "go somewhere international for a few days before coming to San Francisco for Thanksgiving" -- departing DEN for "x" on November 18, flying from "x" to SFO on November 24, and then back to DEN on November 28.
Essentially free, except the re-booking fee:
