For your advice with cooking. I took both of your advice and blended it with what I was doing already, putting a can of tomatoes in with the gravy (I already had a whole tub, seemed a pity to waste it) really brought out the flavour of the chicken and the dumplings are delicious. So far the stew has been tried by two people (other than me), both of whom have been exceedingly complimentary. I feel that some of those compliments belong to you two, so thank you very much for your advice :)
