After working out, I didn't exactly feel like cooking. But I also didn't want to go out to get anything, so when I noticed the warehouse club sized box of stuffing in the garage, I decided that it had been too long since we had stuffing with anything. At first I was going to just make some gravy to pour over stuffing and leftover chicken, but then I felt guilty about the amount of butter than would have taken.
Idea two was sitting on the counter trying to go rotten. They still had a few days left, but not many. Tomatoes! I cut them in half, scooped out the insides and filled them with stuffing, chicken, and of course, cheese. Into the oven while I cooled off some. They weren't bad! I might do that again with breadcrumbs instead and more herbs. Perhaps with different cheese too.
