Made a tasty dish last night and
cappyhead suggested that I post it. Amounts are my best guess/pure fiction, so season as you like.
1. cube and brown 3 lbs chuck roast or similar relatively lean beef. I like to add 2-3 tbs of flour and to brown in sesame oil for beef, but ymmv.
2. Add 1 can coconut milk, 1 tbs garam masala, and cook for 20 minutes to make the beef tender.
3. Add about 8 oz peanut butter, stir until smooth
4. Add 1 large can whole tomatoes (or fresh tomatoes or whatever)
5. Add 3-4 heaping tablespoons of sugar and 1/2 cup wine if desired
6. Add garam masala, cayenne pepper, ginger, seasoning salt, garlic and other spices to taste.
7. Add about 4 potatoes (and any other vegies you have lying around, at appropriate cooking times)
8. Cook about 30 minutes or until the beef is very tender and the potatoes are done.
Serves approx 4-6 depending on hunger. (*grin* served 3 last night)
Ends up very thick and rich, and could be served over rice, which would extend how many it'd feed considerably.
