Hermione insists on completing her studies in the din of the Great Hall, which allows her to focus. She ignores, and welcomes the daytime comfort of white noise.
Nightfall is different. So silent are the halls at Hogwarts that it disrupts her train of thought, and makes her unsettled despite no worries of violating curfew.
The silence, where once the soft rustle of the Potion master's cloak meant safety and protection, disturbs her. There's no adrenalin rush from hearing the snapping of fabric when that cloak whipped sharply around a corner, because now there is the jarring quiet of nothing.
