I created a soup the other day that I've crowned, The Ultimate Cold-Zapping Soup.

It's loosely based on Tom Ka Gai.

1 Tbsp coconut oil
1/2 med onion, chopped
1 clove garlic, minced
Fresh ginger about the same size as the garlic clove
red curry paste to taste (I only use about 1 tsp)
1 can or tetra-pack of coconut milk (about 1 cup, I think)
1 cup chicken broth, preferably homemade
Sugar or sweetener to taste

- Fry the onion, garlic and ginger breifly in oil
- Stir in the chicken broth and the thick coconut cream at the top of the can.
- Blend the curry paste into the coconut water, then add to soup. Simmer breifly.

Coconut oil is about 50% lauric acid, a fatty acid with potent antiviral properties. Breast milk is the only higher natural source of lauric acid, and it helps the immune systems of infants.

The cayenne in the curry paste will help clear your sinuses! Use as much as you can tolerate, but not enough to ruin the awesome taste of the soup. I loved this soup so much, I stumbled to Dihn Dihn for more curry paste so I could make more.

...and 48 hrs after first feeling that scratchy hroat and nose, the cold is just about gone.

(Okay, it was probably the heavy doses of echinaceae, oil of oregano, vitamin C and zinc I was taking, but... the soup didn't hurt!)
