Sweet Matzo Brei
Since there was interest from my ealiser post, here is my Matzo French Toast:
Ingredants - Two matzo crakers Milk, Eggs, Sugar, Cinnamon, Vanilla, Allspice, Butter.
Break up the crackers into quarters or smaller and soak them in milk. Let this sit for a while, maybe half an hour, until the matzo has absorbed the milk and is wet. You may want to turn them over to help absorption.
Once the matzo is wet, add some vanilla and a about a tablespoon of sugar. (I like brown and/or turbano sugar.) Season with cinnamon, allspice, or any other sweet baking spices. (ginger and nutmeg are also good.)
Stir well to integrate the seasonings and give the sugar a chance to melt.
Add two large eggs and stir. You may want three eggs if they are small, or you like a lot of egg in your dish.
Heat a pan and melt a few pats of butter so it foams.
Add the mixture to the hot pan and let it cook. Covering the pan will help the middle firm up.
After a few minutes, turn the brei with a spatula to allow both sides to brown. You might want to add a little more butter to help with the browning.
Serve with maple syrup and enjoy!
P.S. Pamcake syrup is likley NOT kosher for Passover, so use the good stuff - real maple syrup. ;>
