Mmmm I just made the yummiest recipe!! Quinoa, black bean, mango salad!
1 cup dry quinoa
1 can black bean
2 mangos
1 red pepper
1 green onion
1 red onion
1 jalapeno pepper
lime juice
cumin
olive oil
Cook quinoa, rinse black beans, dice everything else, toss with dressing made w/ lime juice, cumin & olive oil
Super high in protein, fiber, & deliciousness
I want to go to the gym but there are severe thunderstorms at the moment and there's supposed to be dime size hail :( I am gonna wait until later tonight because it closes at 11 but being stuck in the house all day makes me want to take naps. Like right now. For example. All i want to do is crawl under my down comforter and put my little head down. Butttt its probably a bad idea. I'm sure I can be really productive if I just keep working ~~sigh~~~
