cheese and milk

I am a bit of a cheese head. I like most cheeses - don't like blue or "stinky" cheeses, but most others will happily slide over my palate. I consider "Velveeta" in the same category as Bud/Miller/Coors.

Because I am a cheese head and a foodie, I bought a cheese making kit, which arrived this week. Because I knew I was going to buy this kit, I have been reading up a lot on the subject.... as you would expect!

Sadly, the FDA is using unsupervised powers to actively interfere with people's ability to buy raw milk for personal consumption... or, in my case, to make cheese. USians have never had an authentic Roquefort cheese, because the FDA mandates that it be pasteurised. Unfortunately most USians are to cheese as are the USians who say "we have all the beers!" meaning Bud/Miller/Coors :-/

There is a bill in the US Congress that would address this, and allow individual consumers to buy raw milk where state law does not prohibit such a sale. I support it, because I would like to have the *choice*. It will also allow small dairy farms to bring in another income stream which, let's face it, is only a good thing!
