Egg dosa!

Back home in India, I remember coming back home from school, to the warm smiles from our mother and the invigorating aroma of our evening snack.  No sooner had we freshened up, our mother used to call out ‘Kaapi pivchaka yeyaachi re’ meaning ‘Come for coffee’ to which we used to have impish smiles on our faces, ‘cos we never got coffee but juice or bournvita or some such energizing drink.  We used to tease mom about this and ask her why she uses that sentence when we weren’t given coffee.  Eventually there came a day when we were allowed to have Coffee or Tea.

Most of our friends have adjusted to the American way of life and have started having dinner at 7ish in the evening but we find it so difficult to eat a meal at that hour.  An evening snack has been the way of life for a long time and we still continue the same out here as well.

So, today we had Egg dosa on the menu.  Just a different way to eat the same dosa.  After the dosa batter is poured on the pan, I add a couple spoonfuls of beaten eggs, chopped tomatoes, onions and green chillies and a little bit of chutney powder.  Turns out delicious and a healthy snack too!
