I've been on an ice cream kick now, and I wanted to try Alton's recipe from Churn Baby Churn.

* 1 cup whipping cream
* 1 cup minus 2 tablespoons sugar
* 2 tablespoons peach preserves (not jelly)
* 1 vanilla bean, split and scraped
It's called "Serious Vanilla" but he includes two tablespoons of peach preserves. If I left out the vanilla bean, and put in another couple TBS of preserves (leaving out the appropriate amount of sugar) (or more), do you think I'd get a decent Peach Ice Cream?
