1. We have some tiny zucchini coming on!
2. Lots of Joe-Pye weed blooming in ditches. Never seen/noticed so much of it at one time before.
3. Dinner tonight: Smashed potatoes and balsamic-glazed carrots.
I roasted the potatoes (Rose Finn fingerlings, and Red Norland- pink inside and out!), and mashed them with cheddar, parmesan, milk, salt & pepper, and chives. It came out a lovely speckled pink color. :)
The carrots I sauteed in melted butter for a bit, then covered to steam until they were cooked. Then I stirred in a spoonful of sugar and a generous slosh of balsamic, and cooked until it was bubbling and syrupy. Yum!
