She also seemed entirely unapologetic about snogging the Doctor on the night before she was getting married, even to Rory’s face, which again.... okay.
Yeah, I found this really weird too... but then it occurred to me that she might not even know that he knows, since she's not in the room when the Doctor tells him and it's the Doctor that Rory brings this up with, he never really confronts Amy directly. Which, admittedly, doesn't really scream OPEN HEALTHY COMMUNICATION, but I think it was meant to be more that they just never talk about it than that she was like "yeah I tried to have a one-night stand WHAT OF IT?"
IDK, we'll have to see, I guess. I felt like the weirdness between the three of them wasn't really resolved, but I wasn't sure if the show wanted me to think it was resolved or not. I kind of got the impression "well! got my spaceship and my boys!" was meant to be like "ALL WAS WELL" and I'm still kind of like "?????? but..."
BUT Rory and the Doctor were fantastic and I am pretty pumped for this new Team TARDIS.
I AM GLAD IT WAS NOT JUST ME. I don't know, I've been finding her really inconsistent. I liked her for the first two episodes and then she didn't do anything for 2.75 episodes, and then since the kiss scene, she's just been really mean to Rory. OKAY THEN, MOFFAT. FINE.

Yeah, I guess... but idk, it still seems weird that Amy is so unbothered by the fact that she was hoping for a one-night stand before her wedding. Okay. And that she didn't even seem to *like* Rory that much until they almost died. This seems like a healthy relationship.

lol that was such a bizarre line of dialogue, but okay.
YEAH RORY YEAH. Eleven 'n Rory is my new favourite team TARDIS, omg.
IDK. I'm hoping this will make more sense by the end of the series, but who knows if any of that will come to pass. I think that you're right about Amy being kind of cold, and I don't know if we're supposed to think that or not -- i mean at times it seems like they're showing her as deliberately cold or aloof, like in VOTD when she sees the girl crying but doesn't do anything, or in Beast Below when she's like "one little girl crying... so?" But those could also just be moments of Moffat putting plot before characters, so it's hard to say.
Her and Rory, I dunno. It was cute when they seemed to be having fun together, but she also sort of flip-flopped a lot in the episode and only seemed to pay attention to him when the Doctor wasn't around. Which is a lot like Mickey and Rose, I guess, except that Mickey and Rose were pretty obviously not going to be end game, whereas Amy and Rory... feel like they probably will be.

I didn't mind the line itself, but it did sound like Amy kind of figuring "THAT TAKES CARE OF THAT!" while I was still like "........wtf are you still planning to get married or what?" And the way she invited Rory along 'just for a little while', I wasn't sure whether that was supposed to mean 'let's just frolic in space for a while before we go home' or 'why don't you frolic in space with us for a while before we take you home' and I think that is a point of clarity that is probably very important.
