2 bad days for 2 good days, not so bad i guess..

i decided to make miniature cannolis by following a recipe i found on the internet, which required ricotta, heavy whipping cream, etc. it turned out really delicious. i bought mini premade wonton wraps and fried them in vegetable oil. then filled them with the cream. they were so good my boyfriend ate them all. lol

then last night, i found a recipe for lemon ricotta pancakes with lemon curd and fresh raspberries which actually contained all the ingredients i had previously bought (and still had) for the cannolis so it was a perfect opportunity to cook something without spending a shitload of money.. the only thing is that the recipe calls for lemon curd which i've been searching for forever and have been unable to find in any ordinary supermarket like publix, etc. so what i did was look up the recipe for how to make lemon curd from scratch. and seeing that IT also contained all the ingredients i already had, i had a go at it.

it was delicious. my boyfriend and i made the ricotta pancakes, and instead of garnishing with fresh raspberries, we put the raspberries in the batter while the pancakes were cooking, and it was so good! i made fresh whip cream by whipping up some heaving whipping cream by hand (hard work!), and i made the lemon curd from scratch which involved me zesting lemons, juicing them by hand (also hard work!), and curdling a mixture of eggs, egg yolks (which i seperated), milk, and sugar.. i was worried it wasnt going to work out the way it should when i put it on the stove and it didnt thicken. but it took a good 30min and alot of mixing, then settling before it actually looked like normal lemon curd. and now its beautiful and absolutely packed with flavor delicious!

to top it off, i powdered some confectioner's sugar ontop of the 'raspeberry ricotta' pancakes and lemon curd, drizzled some syrup, and added a mini canolli to the plate..

it was absolute delight.
