For dinner I thought of going to quiznos, in fact, I went, but left immediately. I then wandered the grocery store aimlessly trying to figure out what I wanted to eat.
I ended up buying eighty cents worth of potato salad from the deli and a bottle of wine (Land of Fire, Argentina, 2008. I'll tell you how it goes later).
Upon arriving home, I ate said potato salad, and felt like crap. Sitting alone in my apartment watching NCIS on HULU and eating potato salad from a plastic container is not how I imagined being AN ADULT would be.
So I bucked up and decided to make some real food.
I started with some mushroms that were getting kind of sad-looking, if I don't cook them now, I figured, I never will.
I sliced an onion into thin rings and sauteed it in a little olive oil, added the mushrooms and let both begin to soften. Then I added about a glass-worth of red wine (Lucinda's, I feel that since I bought new wine, I have free reign to use the remaining 1/3 of a bottle on the counter).
I let the whole thing bubble a little, added garlic salt and left it on the stove simmering while I chopped some lettuce and avocado into comfortable bite-sized pieces.
I spooned half the mushroom/onion mix over a bowl of lettuce, dropped the avocado bits on and grated in a little bit of pepperjack cheese.
The cheese melted deliciously, the avocado was cool and creamy and the heat of the mushrooms wilted the lettuce into a nice approximation of properly-prepared greens.
Now I can sit on the couch alone watching NCIS on HULU and eat REAL GROWN-UP FOOD.
