had a soup making extravaganza on the weekend, one of the soups i made was a borscht. i know a lot of people are unsure about a big bowl of beets but i think it's damn tasty and looks amazing!




and the

6-8 beets, peeled and diced
2 carrots, peeled and diced
1-2 onions, diced
1 Tbsp olive oil
900 mL stock of your choice
~750 mL water or stock
2 cans diced tomatoes
half a small cabbage (red or white), shredded
2 tsp dried basil
1-2 Tbsp vinegar (cider, red wine etc.)
1-2 Tbsp sugar
s + p to taste

- heat oil in a large pot.
- sweat onions and carrots 2 minutes
- add beets and cook 15-20 minutes
- add stock and bring to a boil. simmer until beets are tender-firm
- add remaining ingredients, adjust liquid level to your liking, simmer until cabbage is tender.
- adjust vinegar, sugar and s+p to taste
- put a dollop of sour cream on top and enjoy!

note: soup can also be run through the blender for a different approach, I kinda like the chunks though :) let me know if there are any glaring omissions as i'm typing this from memory :P
