I bought a fit & fresh blender (basically a magic bullet) and what a great appliance! No blender to clean, just the cup!
In there I have rice milk, frozen mixed berries, frozen banana slices, PB and brown rice protein. What a great way to start the day :)
And then, VEGETABLES! Kale, peas and carrots OH MY!
This is the
Minestrone recipe from Vegan Yum Yum. I'm like a 4 year old when it comes to eating dark leafy greens so I'm happy to find a yummy way to prepare them. I veered from the recipe on when I was suppose to add the kale and added it at the last minute so I wouldn't overcook it and it has a great texture this way.
Enough about kale, this soup is a contender for best minestrone I've ever had :D
