I just made vegan hungarian goulash, and it turned out really good. It's a huge pot, too. It should last me a few days. I am going to serve it over gnocci, instead of the traditional egg noodles.
I bet you curry dishes lend themselves well to vegan versions. I think I'll try a vegan version of my dad's javanese curry recipe next.
I'm not vegan, (yet), but I like the challenge it presents in cooking.
