"Hmmm" (squinting his eyes) "are you one of them Pagan folk?" the gatekeep

But isn't the definition of demon a fallen angel? So then a demon that wasn't evil wouldn't be a demon, it'd be an angel.

no, the definition of a falling angel is a devil. Demons are something entirely different.

It's probably on purpose too, so I'll just give up on that idea.

Devils are fallen angels, the Devil is Satan.
Demons are the souls of the condemned after they've been damned they take on a solid aspect. Their are also ancient elder gods that have been labelled as demons over the millenia.
