vegan fudge
3 cups sugar
2/3 cup cocoa powder
1/8 teaspoon salt
1 1/2 cups good rich vanilla soymilk
4 Tablespoons organic Earth Balance
1 teaspoon vanilla
1-butter an 8-9” baking dish
2-combine first 3 ingredients
3-stir in milk
4-cook over medium heat, stirring constantly, until mixture comes to a rolling boil.
5-lower heat to med-low and boil until mixture reaches 238 degrees on a candy thermometer. (This will take a while, be patient.)
6-remove from heat & add margarine & vanilla. DO NOT STIR.
7-cool to lukewarm
8-beat w/ a wooden spoon until fudge thickens.
9-spread into prepared dish & refrigerate until firm.
