Coley's Stunning Salsa
Ingredients:
7 ripe on-the-vine tomatoes
1 shallot (small/medium or 1/2 a large)
3/4 of a med. white onion
2 med. tomatillos
1/2 bunch of cilantro
1 jalapeno
1/2 a lemon (juice)
1/2 a lime (juice)
1 clove of garlic
Optional ingredients:
Additonal peppers to taste
Basically what you do is combine all the ingredients. Cube the tomatoes small enough that they can be scooped onto a chip, no larger than I'd say 1/2 an inch. Careful not to smoosh them while cutting.
With the garlic, cilantro, tomatillo, and shallot, be sure to mince very well to create small chunks that will spread throughout the salsa. Try to be even with your ingredients so nothing will overpower any certain bite, but instead it will all blend well together.
Squeeze the lemon and lime juice into the salsa. Fresh is always much better than from concentrate, and be sure to watch when you're squeezing the lemon for any seeds. You may way to squeeze into a cup or something first, then sift the seeds out while pouring into your mixture.
