Menu for Oct 21 - 26

Monday - 1/2 cup oatmeal, 1 Tbsp almonds, 1 hard boiled egg
roasted turkey breast, celery, tomatoes and cucumber in mixed green salad (with olive oil/vinegar salad dressing)
crockpot meal since we meet with trainer.

Tuesday - 2 hard boiled eggs, 1 apple, flaxseed
Modified Pullled Pork Greek Salad (cooked plain pulled pork, tomato, cucumber, red onion, 4 olives on chopped romaine) with olive oil vinegar with Greek seasonings
Sauteed chicken breast (plus extra), sauteed mushrooms & zucchini with cherry tomatoes and brown rice

Wednesday - 2 scrambled eggs with sauteed mushrooms and zucchini, flaxseed
Quinoa and black beans (modified from Allrecipes swapping corn out/putting in tomatoes) over spinach
Roasted pork tenderloin with broccoli and cauliflower with salad

Thursday - oatmeal, almonds, 1 hardboiled egg
Spinach salad with chicken breast, sliced apple and sauteed zucchini with olive oil/vinegar dressing
Steak with asparagus (will have to use frozen), mushrooms, and salad

Friday - 2 hard-boiled eggs, 1 apple, flaxseed
Leftover Quinoa & Black beans or leftover steak salad with cucumber and tomato
Chicken breast stir fry with cabbage, broccoli, bean sprouts, mushrooms over brown rice

Saturday - Egg omelet with mushrooms and spinach with pear or apple
Salmon or tilapia with steamed broccoli with brown rice (or quinoa/brown rice)
Roasted chicken thighs with roasted Brussels sprouts, mushrooms, cauliflower (idea adapted from Real Simple)

Snacks will mostly either be apple or pear with sunflower seeds or almonds.

Seems like a lot of eggs.  Probably will have at least one egg breakfast be oatmeal.

Still figuring out for Sunday...then the next week
