First home made, made it all by myself, Kimchee!! Or as the Sweetie calls it.. The Red Jar of Death.
I used an almalgam of my dad's recipe and one I found online. It turned out better than I thought for the first try but it's not utter cabbage perfection yet so I'll tinker with it the next time.
Someone asked me what kimchee was and I went to look at the kimchee wiki page to try and give her a little more than "it's a Korean dish and it's kinda hard to explain." I find there is a long and involved edit war on whether it's appropriate to call it a fermented dish or not. It's a long read over at:
