Zucchini Bread
3 eggs
1 1/3 Cups sugar
1 Cup cooking oil
2 Cups grated zucchini
1 Cup chopped nuts
3 Cups flour
1 teaspoon salt
1 teaspoon soda
1 teaspoon baking powder
1 teaspoon cinnamon
2 teaspoons vanilla
325 degrees for one hour or until toothpick comes out clean.

Zucchini Brownies
2 Cups flour
1 1/2 Cup sugar
1/2 Cup cocoa
2 Cups grated zucchini
1/2 Cup oil
1 1/2 teaspoons baking soda
2 teaspoons vanilla
Bake at 350 degrees for 20 to 30 minutes.
For a more cake like bar, add 2 eggs.

I am lazy and get my zucchini from my mom who has already buzzed it through a food processor, but you can grate it by hand if you have that much free time. :) I don't know how to convert the measurements into EuroStyle, you are on your own there. And these are recipes I used at 7000' elevation. But I hope these work for you, or are easily convertable in any case.
