this is me making fleur de sel caramels and ganache-stuffed figs until 3am (after making a chocolate rum cake). the staff party it was all for was just canceled on account of snow. le sigh.
fleur de sel (salt) caramels enrobed in tempered dark chocolate. the foreground is dried calimryna figs stuffed with chocolate ganache and then dipped in the same tempered chocolate.
