this is a recipe from my great grandmother....maybe even further back than that.....
Aggie's Pumpkin Cookies
1C. shortening
1C. sugar
1C. pumpkin
1 egg
2C. flour
1tsp cinnamon
1tsp soda
1tsp salt
1C raisins(optional)
Cream together shortening sugar and pumpkin. Add egg and mix well. Add sifted dry ingredients(and raisins if you're using them). Drop by the spoonful onto greased cookie sheet. Bake 10-12 min in (preheated) 375deg oven. Frost while warm(but not right out of oven).
Frosting:
4tsp milk
1c. powdered sugar*it's easier if you sift the hell out of it*
1/2c. brown sugar
3/4tsp. vanilla
3tbsp butter
Cook butter, milk, and brown sugar until dissolved. Cool and add powdered sugar and vanilla. Keep warm in double broiler.
I will say that the icing is tricky, you kind of have to play with it---you don't want it too runny, and if it's too think then it's hard to work with....I've been making them so long that I kind of do it without thinking....and definitely be sure to keep it warm otherwise it gets gunky and is a pain in the ass to put on the cookies(which is something my grandmother never quite figured out, but then again she was a shitty cook--hence why i don't hand out HER recipes*grin*)
And in all fairness, I have never made a single batch of these cookies, so I have no clue how many they make. I just make double batches and freeze some...theoretically I freeze them that it. And they ARE good without the icing....but I'm a sugar freak, so i ice them heavily.
