Happy International Womens Day!
I'm back in Warwick for my Mom's birthday and getting in my snuggle time with the cats!
I'm a bit sore from cleaning in the house, plus cleaning at work yesterday. I just really felt like it needed to be done since the housekeepers aren't going to be coming anymore (Dad's economic measure) and since it's Mom's b-day. And I HATE cooking in a dirty kitchen!
I'm making dinner for tonight. It's a vegetable casserole crockpot dish that's surprisingly good. You take cannelli and garbanzo beans, mix them with pesto, italian seasonings and garlic (you're supposed to put onion in to, but since Mom's allergic..), then layer it in a crock pot with slices of precooked polenta and shredded cheese. Then when it's almost done you top it with a layer of cheese, sliced tomato and fresh spinach (your supposed to put radacchino in to, but do I look like a millionaire?). We made this on a Saturday at work a couple of weeks ago, and for something so healthy, it's really tasty.
So anyway, that's cooking, kitchen's clean, so now I just have to get changed into my painting clothes and finish up my old bedroom!
I just wish I could paint my apartment such a pretty color. Right now it's a nice, bland, enough to make you majorly depressed beige.
