Cornbread Mishaps

Ok, so the last couple of times I’ve tried to bake conrbread, i’ve managed to miss SOMETHING in the recipe. The first time was the worst. I realized as I was eating the first piece that it seemed a bit dry. It seemed like the first time I had made this reciepe, which had been a few months ago, when it had been just as dry. That time, I’d had no shortening to put into it, so I’d omitted the ingredient, and paid the price.

Well, this time, I didn’t omit the shortening on purpose… it just kinda, well… happened. I got careless on the recipe, and left it out. Oops. I guess I can say I didn’t really miss it when it developed mold 4 days later and I was forced to toss it. This was 2 weeks ago .

Apparently I didn’t learn my lesson to be careless by doing something like that once. Made more cornbread last night, after realizing I would be out of milk & eggs, and running out to get some, I got the scone pan out, washed it, set it aside, and got all the ingredients together, double & triple checking so I got all everything in this time. Then I put it in the scone pan. Then it went into the oven.

Anybody spot it yet? What did I miss?

From the recipe, “Bake @ 425 for 20-25 minutes in a greased 9×9x2 square pan” (or in my case scone pan). Yeah, I spent 25 minuts scraping out the chunks of cornbread from the pan. I did manage to get about half of them out in one piece, but the rest were just small parts, many of which I ate on the spot.

The cornbread itself turned out wonderfully, with the perfect taste
If only it had been in nice neat triangles.

Oh well, Live & learn, I guess.
