it's 1:30am, but it's whatever. I just had to make cake tonight. I'm to the point where it's something I want to do all the time. How else can I learn. I've looked into the Wilton classes and every fucking place around here has them on Mondays and Tuesdays which are literally the only two week nights I work. Whatever, I'll teach myself. I'll find Youtube videos or something...

That said, I made buttercream from scratch tonight. this is the 3rd recipe I've tried and it's hands down the best! I used Crisco, butter, powdered sugar, milk and clear vanilla extract. At the end, I added a bit of light corn syrup to it for better consistency. It turned out so creamy and smooth. It was wonderful. It's just as good as the Wilton frosting, which makes me happy. I think I did an awesome job of coloring the frosting, it came out exactly the way I wanted it to.

I made two GIANT cakes that took almost an hour to bake!

I did my crumb frost, then stacked them... I actually did the complete crumb frost and stack in THE DARK... because Brian was watching The Spirit and I didn't want to bother him haha...

After stacking, I went about the daunting task of for real smooth frosting this cake. I wanted to die. It was so hard to do! After about an hour of frosting and smoothing, I had to just stop and leave it the way it was because I could have spent all night trying to make it perfect.

I piped some swirls on the sides, like ones I'd seen in a photo earlier on a wedding cake site.
Then piped little dot flowers on top.

I think it took me about 4 hours total, including almost an hour of bake time and about 30-45 minutes of cooling time.

So yeah... here it is, my 5th decorative cake:







The piping is a little sloppy, but by the time I got to it, I was like half away. Oh well!
