First post from me .....
Let me start this off by saying "I <3 YOU LADY, FOR STARTING THIS COMMUNITY!!!". It will help the cooking nerd in all of us. :)
Now, just to start you off, I'll give you all a recipe for one of THE BEST little appetizer things on the planet. I'm really generally iffy about sharing this recipe because it has made me "THE MAN!" so many times in the past. But here ya go .... I got plenty more where this came from:
Pinwheels:
1 - large pkg. of Soft Tortilla Shells (the bigger the better)
1 - 8 o.z. pkg. of Cream Cheese
1 - 8 o.z. pkg. of Sour Cream (optional - or use less)
2 tbsp. of Whipped Dressing or Mayo (optional)
3 large Green Scallions
2 large cups of shredded lettuce (optional)
1/4 lb. of Ham, Turkery, Roast Beef, or any type of cold cuts.
Shredded cheese to taste (optional)
1 - pkg. of "Hidden Valley Ranch" dressing powder (optional)
Let cream cheese and sour cream soften to room temperature. Mix together cream cheese, sour cream, dressing/mayo, and ranch dressing. Whip until light/fluffy/creamy. Spread over tortilla shells leaving just the edges clear. Sprinkle scallions, lettuce, and cheese. Layer meat on top of scallions/lettuce/cheese. Fold in the sides and roll up (into a "jelly roll" type form). Wrap in plastic wrap twisting ends tightly. Refridgerate for at least two to six hours. When chilled, remove plastic wrap. Slice in 1" or so rolls. Serve.
It should be noted that this is a VERY open ended and free flowing recipe. I do it a lot of ways. The way I usually do it is with ham and cheddar. And I usually only use 4 o.z. of sour cream and no mayo or lettuce. But it's really best to just play with it and do what works best for you.
