Gingered Cranberry-Carrot Slaw

1/2 cup unsweetened pineapple OR orange juice
1 teaspoon cider vinegar
1 tablespoon lemon juice
2 tablespoons honey
1 or 2 tablespoons bottled minced fresh ginger
1/2 cup dried cranberries
3 cups shredded carrots

In a small bowl, whisk together orange and lemon juice, vinegar, ginger, and honey. Stir in cranberries, then pour mixture over the shredded carrots and toss to coat. Cover and refrigerate until serving.
