I grabbed this from my mom's eating healthy book.
2/3 cups sliced carrots
1/2 cups diced onion
2 cloves of garlic minced
3 cups of fat free chicken, veggie, or beef broth.
1 1/2 cups of diced cabbage
1/2 cup of green beans
1 tbsp tomoto paste
1/2 tsp dried basil
1/4 tsp oregano
1/4 tsp salt
1/2 cup of diced zucchini
-In a large sauce pan saute carrot, onion, & garlic over low heat until softened, about 5 minutes.
-Add broth, cabbage, beans, tomato paste, basil, oregano, & salt, bring to boil.
-Reduce heat; simmer covered, about 15 minutes or until beans are tender.
-Stir in zucchini.
-Heat for 3-4 minutes.
For those interested, according to Weight Watchers a serving of this is worth 0 points.
It keeps for a while, reheats well, and is good for you.
