ridiculously easy slow-cooker BBQ beef sandwiches

2 to 3 lbs stew meat, trimmed and cubed
1 to 1 1/2 cups BBQ sauce of your choice (I like Sweet Baby Ray's)
2 cups vertically sliced sweet onion
rolls or buns (I used Trader Joe's whole wheat kind)

Place beef and onion in slow cooker. Pour BBQ sauce over all, stir to coat. Cook on "low" for 10 hours or "high" for 6. With a slotted spoon, remove beef from slow cooker and shred with two forks. Return beef to slow cooker, mixing well. If needed, add additional BBQ sauce. Cook on "low" for about 15 more minutes or until heated through. Serve on buns.

I served this last night with some roasted seasoned potatoes, and my boyfriend pronounced it "so good it will make you want to slap yo momma" ;)

Serves about 8.
