Apple Bread

I was totally up till 1 am this morning baking this bread with my friend Kelly. It's worth it :) This recipe makes two loaves, good if you're baking with a friend. If you're not, the recipe is easy enough to halve for a single loaf.

INGREDIENTS:

4 cups "baking" apples, peeled, cored, and chopped (about 4-5 large apples, we used McIntosh)
4 large eggs
1 cup canola oil
2 tsp vanilla extract
2 tsp baking soda
2 tsp salt
2 tsp cinnamon
3 cups all-purpose flour
2 cups sugar

Topping:
3/4 cup all-purpose flour
1/4 cup sugar
2 tsp cinnamon
1 stick butter, softened

Preheat oven to 350 degrees. Lightly grease two standard loaf pans and set aside. Peel, core, and slice the apples, cutting them into good-sized chunks (about 1"). In a large bowl, beat the eggs until fluffy. Add the oil and beat until combined. Add the vanilla extract, baking soda, salt and cinnamon and beat until thoroughly mixed. Next, add the flour and sugar and mix on low to blend. Turn the mixer to high and beat until batter is smooth. At this point the batter will be VERY thick. Fold in the chopped apples (this part you will have to do by hand). Divide the mixture between two pans.

To prepare the topping, combine all topping ingredients in a small bowl and cut together with a fork or pastry cutter until all ingredients are moist and crumbly.

Divide topping mixture in half, sprinkle over each loaf of bread. Bake the loaves together in the oven for one hour or until bread is cooked through. Let cool for five minutes before removing bread from pans. Cool on cooling racks.

Yield: 2 loaves, 20 slices of bread
