In other modes, after I dodge the truck and rush at it, charging at the back of the truck will usually get the AI to fire into the side of the truck trying to hit me even though the truck is in the freaking way. That closes the distance fast enough that I can dodge his last few bullets and rush him to take his gun and kill him.
But those bullets are too fast in impossible mode, so I instead have to duck into the alcove in the left, grab and toss a bottle at him so I can close the distance grab his gun, and cap him. Of course, since this is one bullet mode, I can't actually use the AR against the 3 pistol guys who appear behind me.
So I have to duck back into the alcove and circle in place to get time to "pass" so they'll close the distance. At the point is all very inelegant, I'm just tossing everything I can at those guys, and as you can see, the first guy I hit with the tossed assault rifle has recovered and has his gun back in hand by the time I toss the bottle I just grabbed at the second guy (lucky for me, his gun goes flying way off, and so he opts to charge me unarmed rather than grab the pistol), but since they're bunched up, he can't get a shot at me and I have time to pick up the last bottle to toss at the third guy.
Then its grab that guys gun as it flies through the air, shoot the pistol guy since he's the most dangerous threat, toss gun at middle guy and start to melee, but since its impossible mode, I'm unable to finish him off before the other guy gets out of stun. So I have to punch that guy to get him to back off so I can get back to finish off the other guy. It helps that the one guy opts to go for the pistol on the ground instead. He's not fast enough though, and I punch him to death.

I'm not sure if jumping over those desks is any faster than just going around, but I do it anyways. This is one of my favorite levels because of the racks and racks of guns. Its like the time ultimate Bullseye and Punisher fought, and they end up in the room with all the tools and weapons.
Again, one shot per gun really isn't a big deal, because the enemies are all on you that you don't have time to wait for you gun to reload anyways, so you'd already be tossing it and grabbing another gun to fire.
