Followup on rice cooker

I went with the dual function crockpot looking cooker. It's smaller than I initially thought, and my opinion now is that it's perfect for a single or couple. I took the recommendation I read in many places, throw away the cooking directions that came with the cooker and used the rice package directions instead. It makes great sticky rice. mmmm... I was thinking "thai peanut sauce" while reading the description of the meal, heh...
I'll have to dig up my peanut sauce recipe & post it for you - it freezes, you know; you can make a big batch and freeze it in little containers so you can have some whenever you want it...

Ooh, leftover rice is a very good thing to have on hand (as erynn999 mentions above). If you have leftover rice, an egg, and some soy sauce, you've got the makings of bare-bones fried rice. Any extras - sliced leftover meat, veg, garlic, ginger, what have you - are bonus.

Also, cashew-lemon rice. The monkey can vouch for this one, as we had it for dinner last night.

About scaling and conversions

INGREDIENTS
1 1/2 cups creamy peanut butter
1/2 cup coconut milk
3 tablespoons water
3 tablespoons fresh lime juice
3 tablespoons soy sauce
1 tablespoon fish sauce
1 tablespoon hot sauce
1 tablespoon minced fresh ginger root
3 cloves garlic, minced
1/4 cup chopped fresh cilantro

DIRECTIONS
In a bowl, mix the peanut butter, coconut milk, water, lime juice, soy sauce, fish sauce, hot sauce, ginger, and garlic. Mix in the cilantro just before serving.
