Paneer (Saag Paneer)

Truly and I had invited friends for dinner tonight and thanks to my darling girl finding a good Indian restaurant recently, it came to me to test my culinary and cheese making skills in making an Indian dinner for us.

Nothing fancy - butter chicken and Saag Paneer - from scratch

Hadn't done much with Paneer before - but it seemed very simple

Steps: Boil 1 gallon whole milk



ensure you stir constantly until you achieve a light rolling boil

Then add 8 tablespoons lemon juice and continue cooking for about 15-20 seconds

The milk will curdle



Remove from heat and allow to cool 15 minutes

Drain curd and whey through muslin and preds the curd.



I used our cheese press, but it could be twisted and hung for 2-3 hours

When done, its quite solid



For Saag Paneer, i cubed this and toasted it lightly before preparing the spinach and spices. My Saag was a little spicy but the cheese played out pretty well



Very simple. Quite quick. Not much flavour but picks up the flavours around it quite nicely
