Cracked Wheat Bread

Makes 2 loaves

4 C bread flour
2 C ww flour
1 C cracked wheat flour (finer ground than cracked wheat, but coarser than ww flour)
2 tsp salt
1/4 C gluten
1/4 C golden flax seeds
1/2 C powdered milk
5 tsp yeast
1/4 C canola oil
1/4 C honey
2 2/3 C warm water

I like to start with the dry ingredients first and add just enough water to make a good dough. If you add all the water first, you might need to adjust the amount of flour. Knead with the dough hook for 10-12 minutes, until you get a good texture. Shape in a ball and place in a greased bowl, turning to grease the top, and cover with plastic wrap and a towel and let rise for 45-50 minutes. Plunch down, let rest 5 min, and shape. I like to make sandwiches out of this bread, so I shape into loaves and put in loaf pans. Let rise 45 minutes, preheat oven to 400 (this gives the dough another 20 minutes or so to rise) and bake for 30 minutes. I use a baking stone on the bottom rack, but if you don't you might need to bake it 3-5 minutes longer.
