Lavender

You've been so helpful in my recent gardening blanking (I am blaming school & being a first time gardener of some plants).
I bought lavender last year and planted it at my back garden. When I was cleaning up today in the gorgeous (but odd weather), I uncovered my lavender plants. I left the sprigs on during the winter and noticed at the end of a dried out sprig, it was turning green again. What do I do with the sprigs? Do they grow new ones? Do they just become a zombie and come back to life?
I noticed the same thing on my larger dianthus.
