seed saving question

Hello all! I have a couple seed saving questions I was hoping I could get some help with. I've never tried saving seed before (except for not planting a seed packet and planting it the following year!) but figured I would give it a shot this year.

First, we harvested our onions (perhaps prematurely?) and there are a couple teeny tiny ones. Could these be saved somehow and replanted in the spring, as starts kind of? If so, what would be the best way to keep them through the winter?

And my last question, I got 2 San Marzano tomato plants from freecycle well into the summer here (I planted them in my garden beginning of July). Each plant has about 4 tomatoes on it, but they are totally green, without even a hint of being red. And they survived hurricane Irene! Is there any chance that they will ripen before it gets cold and gross? Is it possible/feasible to save seed from green tomatoes?

Forgive my noob questions, this community has been so helpful and I'm so glad I found it! I've been documenting my "learning experience" in this album. Oh, I'm in East Central New York, I think zone 5A? Again, my noob is showing! Thanks!
