Your little mystery plant could be a hyacinth. That leaf shape looks about right for one. Since they are very early plants, there could've been a small bulb in the potting soil that didn't come up last year because it was too late/warm by the time you were using the soil.

No clue on the paddle plant thingy.

Hmm..maybe.
I dont remember having any, but I did plant a lot of guys that didn't come up...and then there are Nature's helpers.
I'm more confused haha.
I know onion spouts smell like onions.

Paddle plant info online says seeds come from the flowers

I think you're right, but probably a juvenile that won't flower or very small flowers at first.
