The restaurant opened last Tuesday, I put in almost 11O hours in 7 days. The chef, my boss and half owner,  was taken to the hospital and had emergency brain surgery. He walked off the line Friday night, saying he didnt' feel great and needed a breath of fresh air. He went to his car, rested for 20 minutes, and then just drove himself to the emergency room. He was rushed to the hospital, and on Saturday night he underwent a multi hour surgery to remove a permanent shunt from his brain that had gotten plugged. 12 hours after surgery he walked out of the hospital.

I have spent the last day training dish washers to be prep cooks, prep cooks to be line guys, being a dish washer, waiter, manager, pastry chef, bus boy, and confidant.

We are sinking fast.
