I have been making some particularly yummy meals lately and seeing as I don't have Instagram, I am going to share them with you. Well, photos of them. Not the actual food. Because, you know, I ate it. As usual click on any image for a larger version.
Tuna Rice Salad with a hard boiled egg:
I've made this salad quite a few times now. I found the original recipe
here on the BBC website and it's pretty easy to make. It keeps for up to 3 days and so there's plenty there for a couple of meals when it's too hot to cook. The egg is an optional extra, I just fancied one on this day and managed to make the almost perfect boiled egg. Good job I documented it because that is never going to happen again.
Chicken teriyaki with rice and roasted peppers:
This was something I threw together really quickly and which actually came out really well. The pepper was leftover from something I'd made a day or two before so I just cut it into strips and cooked it in the pan while I was cooking the chicken. I took the pepper out and kept it warm, then added
Blue Dragon's finest teriyaki sauce to the chicken. Served with basmati rice with the pepper strips on top. Ta-dah! Looks pretty good, even if I do say so myself!
Chicken Pilau:
Versions 1 and 2. It's supposed to have a red pepper in it but on both occasions I had a different coloured one that needed eating up first! The first one looks all one colour which is a shame. The second attempt came out much better, not just because of the different colour pepper, but also because I got the spices better. More cumin seeds and less turmeric! It was really yummy.
Quesadillas:
I'd made fajitas a couple of days before and had some tortillas left over so I made quesadillas. Mine had cheese and some chicken slices with peppers in that I found in Aldi. It worked better than I thought because heating up the chicken slices brought out the flavour of the peppers so that was lucky.
Chocolate Almond Pudding v3.0:
This is the third or fourth attempt at making this. It's gluten free because it's made with ground almonds rather than flour, and it's supposed to have a molten middle. The recipe says to use 100g of dark chocolate that's 70% or greater, but it was far too rich. Each time I've it since, I've substituted some of the dark chocolate for milk chocolate; this one which I made earlier was 25g dark chocolate and 75g milk chocolate. But each time it's taken longer to cook and come out sloppier so I think the milk chocolate is causing that. I think I might have to give up on this recipe which is a shame.
