Ham it up :)

Feb 22, 2012 00:51

I made a nice baked ham today with some good sides. I make steamed green beans, sauteed zucchini with dill, biscuits and my spicy potato soup. Now keep in mind I have a sinus issue going on (I think its an infection but refuse to go to doctor unless it hurts bad so eating spicy helps)...so my husband is complaining that I made it waaay too spicy that he can't taste much of other food if he eats it heh. Here is how I made it.

5-8 Potatoes
1 can of evaporated milk (Pet is best :)
1 stick of butter or margarine
Tony Cacheres Creole Seasoning
Old Bay Seasoning
Salt
Pepper

Wash, peel, and quarter the potatoes.
Put potatoes into a stock pot and fill with water. Salt and pepper the water to taste. Boil potatoes until they are fork tender. When they are a soft texture take off heat and drain into a colander. Put potatoes into a big mixing bowl and pour in the can of milk and toss in the stick of butter. Smash around with a whisk or hand mixer if you have one. Add more milk if you need to make the mixture more soupy. Then add in the old bay and Tony Cacheres to taste (heavy handed if you are me lol). Serve with buttered biscuits or buttered slices of sour dough bread.
I have also made this with leftover baked potatoes reheated.
